Kale Chips & Sweet Potato Fries

Ingredients:

Kale Chips
1 bunch of kale — stems removed tossed with 2 tablespoons olive oil and sprinkled with sea salt.

Sweet Potato Fries
Olive oil, for tossing
5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
Smoked paprika to taste
Garlic powder to taste
Sea salt and freshly ground black pepper to taste

Directions:

Kale Chips

Preheat oven to 425 degrees – bake until “chips” are crisp – about 12 – 15 minutes.




Sweet Potato Fries




Preheat oven to 450 degrees.



Line a sheet tray with parchment. In a large bowl toss sweet potatoes with just enough oil to coat. Seasoning and paprika, garlic powder, sea salt and pepper to taste. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes or until crisp. Let cool 5 to 10 minutes before serving.
